Pineapple Pork tenderloin recipe mixes the savory flavor of pork with pineapple sweetness. Ingredients

Pineapple Pork Tenderloin

  • 4 slices fresh pineapple 1/ 2 inch thick
  • 1 pork tenderloin approximately 1½ pound / 700 grams
  • 3 tablespoons hoisin sauce
  • 2 teaspoons fresh ginger peeled and grated
  • 1 medium garlic clove minced
  • 1 teaspoon Dijon mustard
  • salt and ground black pepper according to taste

Ginger Sauce

  • 2 tablespoons pineapple juice
  • 2 teaspoons fresh ginger peeled and grated
  • 1 teaspoon soy sauce
  • 2 tablespoons hoisin sauce
  • salt and ground pepper according to taste

Instructions

  • For Pineapple Pork Tenderloin, first, preheat the broiler. In the baking sheet lined with aluminium foil, arrange with pineapple slices.
  • Make Sauce: In a small bowl, mix hoisin sauce, ginger, garlic and mustard together very well. Arrange the pork on the broiler pan fitted with a rack. Apply the sauce evenly all over on the pork.
  • Broil it: Place the pork tenderloin in the broiler about 4 inches from the heat and place the pineapple slices on the rack below pork. Broil the pork for 8 - 10 minutes on each side, and until the meat thermometer shows 145 degrees F.
  • Make Pork Slices: Remove the pork from the broiler and let it rest for 10 minutes. Till then turn the pineapple slices, cook until browned in spots, for another 10 minutes. Then slice the pork to thick slices.
  • Serve: Cut the pineapple slices  into halves and arrange them on a platter with pork slices. Drizzle the pan juices over the pork, and season it with salt and pepper. The glazed pork tenderloin with pineapple is ready, serve it with quick ginger sauce.

For Quick Ginger Sauce

  • In a small bowl, mix together all the ingredients like pineapple juice, freshly grated ginger, hoisin sauce, and soy sauce. Season it sauce with salt and pepper.

Notes

  • if Dijon mustard is not available, then yellow mustard or any regular mustard.
  • if you want to little spicy flavor, red pepper flakes can be sprinkled on the sauce (according to your taste)
  • use fresh ginger to get the intense flavor
  • it is better to use frozen ginger for grating, it grates easily
  • broiler pan can be substituted with baking sheet
