Lemon chicken soup with rice is a delicious and healthy soup. My favorite easy chicken lemon rice soup goes well for all seasons. It's prepared with veggies, shredded chicken, homemade chicken broth, and herbs, loaded with rice, and flavored with lemon.  Check how to make chicken lemon soup at home.


Ingredients

For Homemade Chicken Broth

  • 1 lb or 500 grams chicken boneless and skinless (breast or thighs)
  • vegetable and chicken scraps (carrots peels and ends pieces), onion (skins and ends), celery ends, chicken skins, and bones.
  • 2 bay leaves
  • salt and pepper (according to taste)
  • 8 cups water

For Soup

  • 1 cup carrots (diced)
  • 1 onion (diced)
  • 1 cup celery (diced)
  • 1 tbsp olive oil
  • 3 garlic cloves (crushed)
  • 1/2 tsp thyme dried
  • 1/2 cup arborio rice or any white rice
  • 8 cups chicken broth (homemade or readymade)
  • 2 lemons (juiced)
  • parsley or mint (chopped) for garnishing

Instructions

  • First, prepare the chicken broth, take the vegetable scraps like peels and ends of carrots, onions, and celery. Place them in a large pot or Dutch oven.
  • Add the chicken pieces (breast or thighs), chicken skin and bones, bay leaves, salt, pepper, and water to the pot.
  • On high heat get this to a boil. Then lower the heat and let it simmer for nearly 30 minutes or until the chicken gets tender.
  • Then remove the chicken pieces from the broth and shred them. Strain the chicken broth with a fine mesh strainer.
  • Keep the homemade chicken broth aside and discard the vegetable scraps, chicken bones, and skin.
  • Place the empty large pot or Dutch oven on medium-high heat and add the olive oil.
  • Add the diced carrots, onions, celery, garlic (crushed), and thyme. Cook for nearly 5 minutes or till they get tender.
  • Add the rice, shredded chicken and pour in the chicken broth.
  • Get it to boil and then lower the heat. Let it simmer for nearly 15 minutes or till the rice gets cooked.
  • Finally, add the lemon juice and nicely stir it. Taste the lemon chicken soup with rice and season it with salt and pepper according to your taste.
  • Garnish it with fresh chopped parsley or mint, and lemon slices before serving.

Notes

  • it is better to add the lemon juice at the end, to keep its bright flavor.
  • the chicken broth can be prepared in advance and stored in the fridge with the shredded chicken.
  • readymade chicken broth can be used, it saves time. Only check if salt is already added to the broth and adjust accordingly.
  • if arborio rice is not available, other rice like brown rice, long grain rice, or basmati rice can be used.  Only the rice cooking time will vary according to the rice used.
  • if dried thyme is not available other herbs also can be used.
