Ingredients

  • 4-6 pieces (nearly 2 lbs) chicken breasts boneless and skinless
  • salt and pepper according to taste
  • 1 medium onion chopped finely
  • 1 piece red bell pepper (red capsicum)
  • 1 red chili seeded and diced (optional)
  • 2-3 pieces garlic cloves minced
  • 1 tbsp ginger minced
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken stock or vegetable stock
  • 1 tbsp cornstarch
  • 2 tbsp lime juice
  • cilantro leaves or lemon slices for garnish

Instructions

  • For one pan creamy coconut lime chicken, first, season the chicken breasts on all sides with salt and pepper. Mix together the chicken stock and cornstarch in a small bowl and keep it aside.
  • Take a large cooking pan or skillet and heat oil on medium-high heat. Add the chicken breast. Pan-sear the chicken breasts on each side for 5 -6 minutes or till golden brown and nearly cooked. Keep the chicken pieces separately on a plate.
  • Cook the aromatics: Add onions in the same pan and saute them. Stir frequently for nearly 2 minutes till they get slightly brown. Now add the ginger, garlic, and red chilli (optional) and saute them stirring constantly for nearly 30 seconds, till they get fragrant.
  • Finally, add the bell pepper to the pan or skillet and cook for nearly 2 minutes or till the veggies begin to soften.
  • Prepare the Sauce: Take the stock cornstarch mixture and coconut milk and add them to the pan. Mix them well. Stir, scraping up any browned bits remaining attached to the pan the chicken was cooked. It will pick the chicken flavor. Simmer it stirring occasionally until the sauce thickens for 4 - 5 minutes.
  • Add all together: Stir in the lime juice and mix it very well. Finally, add the chicken back to the pan. Cover it, and cook on medium-low heat for 3 - 4 minutes, until the chicken is cooked. Adjust the salt and pepper according to your taste. Finally, garnish the one-pan lime coconut chicken with cilantro or lemon wedges.

Notes

  • for good taste, it is better to use fresh garlic, if it is not available garlic powder also can be used.
  • the chicken breasts can be sliced into 2 parts to serve more people.
  • the chicken stock can also be replaced with vegetable stock or plain water.
  • the cornstarch can be replaced with any other flour, and the thickness consistency also differs.
  • chicken thighs can replaced with chicken breasts, only the cooking time with differ.
