Instructions
Wash the carrots with water. Peel them. Take the grater and grate the carrots. It is better to use food processor.
Next take a heavy bottom pan or wok, add the add the milk and get it to a boil.
Next add the grated carrots and cook on low flame, keep stirring.
Remove all the evaporated milk stuck at the sides and mix it again with the mixture. Keep stirring to avoid getting stuck at the bottom.
Keep stirring till the milk is nearly evaporated, and very little is remaining.
Add the sugar and mix well, cook till the sugar melts and the moisture nearly evaporates.
Then add the clarified butter/ ghee and stir it well. Continue to cook till the moisture completely evaporates.
Finally add the cardamon (elaichi) powder and stir well. Add the chopped dry fruits and mix well. Finally the Carrot ka halwa / Gajrela is ready to be served.
Notes
Milk used should be thick (full cream milk) and not thin or skimmed milk.
Use a heavy bottom pan for cooking, to avoid halwa stickiness
Stirring occasionally is necessary to avoid the stickiness and getting burnt at bottom.
