Ingredients
7cupswater
1 1/2cupmasoor dalred lentils
1teaspoonturmeric powderhaldi
salt as required
1tbspred chilli powder
1 1/2tablespoonscoriander powder
65gramsjaggery crushed
1medium tomato chopped
5green chillies slit
7Kokums washed
2tablespoonscoriander leaves chopped
For Tempering
2tablespoonsvegetable oil
1teaspoonmustard seedsrai
1/2teaspooncumin seedsjeera
2whole dry red chillies
1sprig curry leaveskadi patta
a large pinch of asafoetidahing

Instructions
Rinse the red lentils / masoor dal in water a couple of times. Keep rinsing till the water becomes clear.
Add it to the pressure cooker with 4 cups water. Add turmeric powder and salt. Stir once. Now cook for 3 minutes after getting the full pressure. Allow it to cool down naturally.
Then open the cooker and mash dal to blend with liquid.
Place the cooker with masoor dal on high heat. Add 3 cups water (remaining) and other ingredients except the ingredients in the tempering section.
Then Reduce the heat and cook for 5 mins stirring occasionally.
Now on the other side take the frying pan, heat oil for 1 minute. Add mustard and cumin seeds. When they start crackling, add red chillies, curry leaves and asafoetida (hing). Stir for a few seconds and pour over the masoor dal.
Cook for a few seconds more, stir well and the Gujarati Masoor Tadka Dal is ready to be served.
