Clams Dry / Khube Sukke Recipe is a very famous Goan shellfish Dish available at most of the goan and malvani restaurants and at the shacks. Ingredients
40 - 50clams / tisre / Khube
1tbspginger garlic paste
2Kashmiri Red Chillies
2medium chopped onions
1/2tspturmeric powder
1tspchilli powder
2green chillies slit
1/2tspgaram masala
a pinch of sugar
1tbspTamarindsoaked in 1/4 cup warm water
1/2cupgrated coconut
2tbspchopped coriander leaves
4tbspOil
salt as per taste

Instructions
First soak the Tisre / Clams in water with little pinch of salt for 20 - 25 minutes. Then with some sharp knife open the clams / Tisreo halves and remove flesh from one shell and place it on another shell. Now discard the first shell. Follow this for all the Tisrya / Shube and store the water collected after opening the clams as stock.
Heat oil in the thick frying pan / wok and fry the red chillies and ginger garlic paste for a few seconds.
Add Onions and fry till they become transparent. Now add the turmeric powder and red chilli powder and fry for a few second more.
Now add the clams / Tisre, green chillies, garam masala, sugar, tamarind water, 1 tbsp coriander leaves, salt and little stock water which was kept aside.
Mix all the ingredients very well and and let it cook on low flame. Cook till the water nearly dries up. Then finally add the grated coconut and cook till the clams / Khube are cooked. Finally Garnish the goan tisre sukke / Sukhem with remaining coriander leaves.
