Homemade Tomato Soup With Fresh Tomatoes and Milk is  delicious vegan soup that is easy to prepare. This creamy soup goes well at any season and can be served hot or cold. Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 2 carrots diced
  • 3 cloves garlic minced
  • 5 fresh tomatoes diced
  • 2 tbsp tomato puree/paste
  • 8 fresh basil leaves
  • 3 cups vegetable broth / stock
  • salt according to taste
  • 1/4 tsp ground black pepper according to taste
  • 3/4 cup milk

Instructions

  • For Homemade Tomato Soup, take a medium pan and on medium heat olive oil.
  • Add the diced onions and diced carrots, saute them 6-7 minutes, until tender. Add minced garlic and cook for another 40 - 50 seconds.
  • Then add tomatoes, tomato paste, basil  leaves, vegetable stock and stir well. Season the mixture with salt and pepper.
  • Stir well, close, and get it to a boil. Reduce the heat to medium-low and simmer for another 20 minutes, until the tomatoes are tender, stirring occasionally.
  • Next, blend the soup in the blender or immersion blender till it becomes smooth and pureed.
  • Now transfer the soup to the pan. Add the milk and stir well to combine.
  • Season the soup to taste, with salt and pepper. Simmer the homemade creamy tomato soup with fresh tomatoes and milk for 2 – 3 minutes before serving hot.

Notes

  • if fresh tomatoes are not available, canned tomatoes also go well this soup
  • any herbs  like oregano, rosemary, or any of your choice can be added
  • for little spicy soup, hot sauce or crushed red pepper flakes can be added
  • if you are not on vegan diet, you can add chicken broth/ stock to the soup
  • you can also use the skim milk or the plant-based milk
  • if tomatoes are extra tart, little cream can be added to the soup, cream is not required if tomatoes nicely ripe
