Crispy lemon chicken is delicious easy and quick chicken recipe prepared with simple ingredients. This juicy and crispy lemon chicken can be prepared with chicken thighs or chicken breasts. It's oven baked chicken, crispy from outside and juicy and tender from inside. Check how to cook healthy lemon pepper chicken with garlic.


Ingredients

  • 4 chicken thighs skin-on, bone-in or 4 chicken breasts (skinless, bone-in) (remove extra fat)
  • salt and pepper
  • 2 teaspoons olive oil
  • 2 tablespoons garlic minced
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth or stock
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 tablespoon fresh chopped parsley plus extra to garnish
  • Lemon slices for garnish

Instructions

  • For crispy lemon chicken, first, preheat the oven to 400°F – 200°C. Nicely pat dry the chicken thighs with a paper towel. Season them with salt and pepper
  • Take a small bowl, mix together lemon juice, chicken broth, oregano, thyme and parsley and keep aside
  • Heat oil in the oven-proof skillet or frying pan on medium-high heat. Add the chicken with the skin side down. Sear for nearly 8 minutes or until crispy golden brown. Then turn it and sear for another 8 minutes, till it becomes golden.
  • Add the garlic to one side of the pan. Saute for nearly 30 seconds. Transfer the garlic to the small bowl sauce mixture. Mix well and then pour sauce evenly over the chicken thighs.
  • Transfer the pan to the oven and bake the chicken for nearly 15 - 20 minutes till cooked or the internal temperature shows 165°F.
  • When the crispy oven baked lemon chicken is done, remove it from the oven and let it rest for at least 5 minutes. Add salt and pepper if necessary. Garnish it with chopped parsley and lemon juice according to taste.

Notes

  • if this recipe chicken thighs or chicken breasts can be used. I prefer using chicken thighs, it is better.
  • if the lemon chicken isn't crispy, it can be kept under the broiler for 1-2 minutes, till it gets browned.
  • whether chicken thighs or chicken breasts are used,  the internal temperature should be 165°F, which confirms it is cooked.
