This classic homemade chicken noodle soup my grandma prepared during my childhood. Now I share this grandma's chicken soup recipe that has been passed on. It is a tasty, nutritious, and nourishing soup prepared from scratch with chicken, vegetables, and noodles or pasta. Check how to make grandma's chicken noodle soup at home on the stove top. Ingredients

  • 1 whole chicken 3 - 4 pounds (1.4 kg - 1. 8 kg)
  • 12 cups water
  • 2 large carrots or 1/2 pound 250 grams carrots (diced)
  • 4 stalks celery diced
  • 1 large onion diced
  • 4 garlic cloves minced
  • 2 bay leaves
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 1 teaspoon dried basil or 1 tablespoon fresh basil
  • 1 teaspoon dried marjoram or 1 tablespoon fresh marjoram
  • salt and pepper according to taste
  • 8 ounces 225 grams dried fettuccine or egg noodles

Instructions

  • First nicely clean the chicken in water. Place the chicken in a large pot and add water.
  • Keep the pot on medium heat on stove. Get to a boil. Then reduce the heat and continue cooking. Cook for an hour at least  or till the chicken gets cooked and soft.
  • Remove the chicken and let it cool down. Remove the skin and  bones. Shred the chicken into bite size pieces.
  • Now add onion, carrots and celery to the chicken stock
  • Then add the garlic, bay leaves, dried thyme, dried marjoram, dried basil, salt and pepper.
  • Get the chicken stock to boil on medium heat. Reduce the heat and cook for another 15 -20 minutes  or till the vegetables get tender.
  • Now add the dried fettuccine or egg noodles cook till tender. Then add the shredded chicken and give it a nice stir.
  • Remove the bay leaves. Adjust the salt and pepper. Garnish the soup with chopped parsley leaves. Serve the Grandma's Homemade Chicken Noodle Soup hot.

Notes

  • If whole chicken is not available, chicken breasts, and chicken thighs can be used with bones or boneless pieces.
  • If it is pre-planned to store the soup in the fridge, it is better to add the noodles later to the soup. It can be added while serving.
  • fresh herbs also can be used
  • while storing the soup in the freezer, it better fill the container 3/4 as it will expand.
