Ingredients

  • 10 lbs live crawfish rinsed and cleaned
  • 4 ears corn cut into halves
  • 2 lbs baby potatoes
  • 1 lb smoked sausage sliced
  • 1 sliced lemon halved
  • 1 onion quatered
  • 6 cloves garlic ,smashed
  • ½ cup Cajun seasoning plus more to taste
  • 2 tbsp salt
  • 1 tbsp cayenne pepper (optional for extra spice)
  • 3 bay leaves
  • 1 stick butter
  • 4 gallons water

Instructions

  • Prepare the pot: Fill a large stockpot with water and bring it to a boil. Add Cajun seasoning, salt, cayenne, lemon, onion, garlic, bay leaves, and butter. Stir well and let it simmer for 10 minute.
  • Cook the vegetables & sausage: Add potatoes and cook them for 10 minutes. Then, add sausage and corn, cooking for another 5 minutes
  • Boil the crawfish: Add the live crawfish to the pot and stir well. Let them boil for about 3–4 minutes, then turn off the heat.
  • Soak for flavor: Let the crawfish soak in the seasoned water for 20–30 minutes to absorb more flavor.
  • Serve & enjoy: Drain the pot and spread everything crawfish boiled on a table lined with newspaper. Dig in with your hands and enjoy the feast!
