Black Bean and Lentil Soup Recipe - Debz Delicious

Black bean and lentil soup is a delicious soup with lentils and beans, also vegetables. This lentil soup with beans is a healthy soup full of nutritious vegetables, fiber and proteins. It's the perfect soup that is mostly prepared at winter for dinner, and very easy to make. Check here the recipe for lentil black beans soup.


Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion (diced)
  • 2 cloves garlic (minced)
  • 3 large stalks celery (diced)
  • 2 small carrots (diced)
  • 2 tsp chilli powder (adjust it to your taste)
  • 1 tsp ground cumin
  • 2 bay leaves
  • 1 can (14.5 ounces OR 411 grams) tomatoes (diced)
  • 1 can (15 ounces OR 425 grams) black beans (canned) (drained and rinsed)
  • 1 cup dried green lentils
  • 5 cups vegetable broth or chicken broth
  • 1 lime juice (optional)
  • 1/4 cup chopped parsley (for garnish)

Instructions

  • For a black bean and lentil soup, take a soup pot, preheat the olive oil in it, on medium heat.
  • Put onions and garlic cloves in it, and sauté them.
  • Further, add diced celery and diced carrots, mix well. Sauté for 5 - 6 minutes, till onions gets tender.
  • Now add chilli, powder, ground cumin and bay leaves. Sauté them for nearly 30 seconds, till it gives the flavor of the spices.
  • Add the diced tomatoes with juices, black beans, green lentils and broth. Stir everything well and get the mixture to a boil on medium high heat.
  • Here reduce the heat, and simmer for 25 - 30 minutes, or till the lentils are tender.
  • Remove the bay leaves from the soup. Partially take the portion of the soup in a pot. Blend the soup with immersion blender, till its gets a chunky texture.
  • Then add the blender mixture, back to the soup pot and stir well on medium heat.
  • Adjust the salt and pepper taste in the soup. Add the lime juice and stir well. Simmer the soup for a minute.
  • Finally garnish the bean lentil soup with chopped parsley, before serving.

Notes

  • it is better to soak the dried lentils for overnight, to reduce the cooking time.
  • add extra broth or water if beans start drying out and continue cooking.
  • after cooking, keep the soup aside for at least 10 minutes, before serving. It will get the best flavor.
  • adjust the seasoning in the soup, according to your taste.
  • while cooking, keep stirring occasionally to prevent them from sticking.
