Ingredients

  • 1 bunch broccoli rabe
  • 4 cloves garlic (sliced)
  • 2 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • salt and pepper (according to taste)

Instructions

  • To make sautéed broccoli rabe with garlic, first wash the broccoli rabe thoroughly, trimming the hard end of the stems.
  • Boil the broccoli rabe in a pot of salted water. Blanch it for 2 - minutes, then transfer it to an ice bath. It will reduce the bitterness.
  • Heat olive oil in a pan on medium heat and sauté the garlic and red pepper flakes. Saute them until fragrant for nearly 1 minute.
  • Cook the Broccoli Rabe to the pan, tossing to coat in the garlic-infused oil. Cook for 3-5 minutes until tender
  • Season this broccoli rabe with salt and pepper, drizzle with extra olive oil if desired, and serve hot.

Notes

  • To reduce bitterness, blanch in boiling salted water for 1 - 2 minutes before cooking.
  • Use fresh sliced garlic to give nice smell and increase the flavor.
  • Don't overcook just sauté just until the greens are tender but still slightly crisp
