Instructions
First preheat the oven to 430°F, on the baking sheet place the halved tomatoes and garlic cloves. Sprinkle 2 tablespoons olive oil, salt, and pepper. Roast them for nearly 25 minutes or till the tomatoes get soft and charred. Then keep the roasted tomatoes and garlic aside.
Take a medium pan, on medium-high heat, add 1 tablespoon olive oil. Add the chopped onions and saute for 4 - 5 minutes. Add the thyme and mix well and further saute till the onions get transparent (2 - 3 minutes). Add the tomato paste/puree, basil leaves, and sugar and stir fry for another 1 - 2 minutes.
Add the vegetable broth / stock and mix well. Season the mixture with salt and pepper. Stir well, close, and get it to a boil. Reduce the heat to medium-low and simmer for another 10 minutes stirring occasionally.
Add the roasted tomatoes and garlic, and simmer for another minute. Next, blend the soup in the blendertill it becomes smooth. Now transfer the soup to the pan and simmer the homemade creamy roasted tomato basil soup for 2 - 3 minutes before serving hot.
OPTIONAL: If the soup consistency is too thin, mix the cornflour with water without lumps to a thin paste. Get the soup to a boil and gradually add cornflour paste to the soup, simmer till the soup becomes thick stirring occasionally.
Notes
to make soup consistency thick, a boiled potato can be used.
if fresh tomatoes are not available, canned tomatoes can also be used.
