Ingredients
2lbsor 1 kg cherry or grape tomatoeshalved
4large garlic clovespeeled & chopped
4tablespoonsextra virgin olive oil
1– 2 tablespoons balsamic vinegaroptional
2tablespoonsbasil leavesminced
salt and fresh ground pepperaccording to taste
2tablespoonsfresh herbschopped (parsley or chives)

Instructions
For roasted tomatoes and garlic, first preheat the oven to 425°F. Line the baking sheet with foil and spraying lightly with vegetable oil.
Place the tomatoes with chopped garlic and basil leaves in the mixing bowl. Sprinkle olive oil and balsamic vinegar. Season them with salt and pepper. Toss them well till evenly coated.
Transfer the tomatoes to the baking sheet. Spread them evenly in one single layer, with the cut side up.
Roast them for 15 -20 minutes or until tomatoes get tender and caramelized, and some begin to burst
Finally, roasted cherry tomatoes are ready, sprinkle with fresh herbs before serving.

if tomatoes are larger they can be cut into quarters.
