How To Make Bean And Lentil Soup
- For lentil bean soup, keep the soup pot on medium heat. Then pre-heat the olive oil. For a minute, sauté onions and garlic cloves in the pot. Add the diced celery, and diced carrots to this. Sauté for another 5 – 7 minutes until the onion is tender.
- Add chili powder, ground cumin, and bay leaves to the pot. Mix everything well. Sauté for nearly 30 seconds.
- Add the diced tomatoes with juices. Also, black beans, green lentils, and the broth. Mix them well. Set them on medium-high heat. Get the soup mixture to a boil. Then on low heat cook till the lentils soften, or for nearly 25 – 28 minutes.
- Remove the bay leaves from the soup. Take the immersion blender, and partly blend the soup. Blend it till it gets the chunky texture. Add the blender mixture, back to the soup pot and stir well on medium heat.
- Finally, taste the soup and adjust the salt and pepper. Mix the lime juice in the soup. Stir well. Simmer the soup for a minute. Before serving, garnish the lentil and bean soup with parsley (chopped).

- 5 cups vegetable broth or chicken broth

- Adjust the salt and pepper taste in the soup. Add the lime juice and stir well. Simmer the soup for a minute.
- Finally garnish the bean lentil soup with chopped parsley, before serving.

- it is better to soak the dried lentils for overnight, to reduce the cooking time.
