Carrot Halwa can be prepared with any regular carrots too available in the market. In North India, this is a very popular carrot dessert / Indian carrot pudding called gajrela is prepared during winter. Mostly the red carrots are used to make gajrela / carrot ka halwa recipe.
This carrot pudding / dessert is prepared at most Indian houses. It is a very common dessert prepared for all festive, wedding, and other occasions. At wedding occasions, this carrot ka halwa / gajrela is mostly served along with vanilla ice cream.

Carrot Halwa / Gajrela is an delicious Indian Carrot Pudding prepared during different occasions. It is also served as the best Indian Carrot Dessert. This particular recipe of Carrot Ka Halwa has basic ingredients of grated carrots, sugar, milk, and ghee in it.
Different Recipes of Carrot Ka Halwa
I have 3 methods to make carrot halwa at home, 2 methods I have already posted:
- Gajar Ka Halwa with Khoya / Mawa: In this method khoya or Mawa is also used in making the halwa. This method is posted in the previous post.
- Gajar Ka Halwa with Condensed Milk / Milkmaid: In this method this condensed milk / milkmaid is also utilized to make the halwa. This process is better when in a hurry. This recipe is also posted in the previous post.
- Traditional Carrot Ka Halwa / Gajrela Recipe : This method to make gajrela does not use the khoya / Mawa nor the condensed milk / milkmaid. It very delicious and worth giving a try. In this recipe of traditonal carrot halwa full fat milk, ghee and sugar are basic ingredients required.

How to Make Best Gajrela
- To make easy Gajar ka Halwa / Gajrela at home, first nicely wash the carrots and peel them. With the grater nicely grate the carrots and keep aside. If you have a food processor it will better to use, as it will make work easy.
- Take the heavy bottom pan or wok, add the full fat milk and get it to a boil. Then add the grated carrots and cook on low flame, stirring occasionally.
- Keep stirring regularly, remove the evaporated milk that gets stuck to the sides and stir it back in the mixture. Also stir regularly so that nothing gets stuck at the bottom also. Continue stirring till most of the milk is nearly evaporated, and very little is remaining.
- Add sugar and stir it very well. Cook till the sugar melts and then continue to cook till the moisture nearly evaporates. Then add the clarified butter/ ghee and stir well. Continue to stir regularly till the moisture completely evaporates. Then add the cardamon (elaichi) powder and stir well. Also add the chopped dry fruits and mix well. Finally the Carrot Ka halwa Recipe / Gajrela recipe is ready.

It is very common Indian dessert served in the winter season in India. It can be served hot or cold. Carrot ka Halwa is served very well with vanilla ice cream. This is mostly a good combination served during wedding occasions.

Gajrela Recipe, Carrot Ka Halwa, How to Make Gajrela
Ingredients
- 600 gms carrots gajar
- 3 cups full fat milk
- 1/2 cup sugar
- 3 tablespoons clarified butter ghee
- 5 - 6 cardamons /elaichi powdered
- 10 cashews chopped optional
- 10 almonds chopped optional
- 10 pista chopped optional

Instructions
- Wash the carrots with water. Peel them. Take the grater and grate the carrots. It is better to use food processor.
- Next take a heavy bottom pan or wok, add the add the milk and get it to a boil.
- Next add the grated carrots and cook on low flame, keep stirring.
- Remove all the evaporated milk stuck at the sides and mix it again with the mixture. Keep stirring to avoid getting stuck at the bottom.
- Keep stirring till the milk is nearly evaporated, and very little is remaining.
- Add the sugar and mix well, cook till the sugar melts and the moisture nearly evaporates.
- Then add the clarified butter/ ghee and stir it well. Continue to cook till the moisture completely evaporates.
- Finally add the cardamon (elaichi) powder and stir well. Add the chopped dry fruits and mix well. Finally the Carrot ka halwa / Gajrela is ready to be served.
Notes
- Milk used should be thick (full cream milk) and not thin or skimmed milk.
- Use a heavy bottom pan for cooking, to avoid halwa stickiness
- Stirring occasionally is necessary to avoid the stickiness and getting burnt at bottom.
