It is better to use Delhi Carrots / Gajar for the recipe of carrot halwa with condensed milk. They are more tastier and tender. In India, during the winter season, they are easily available. Otherwise, any ordinary carrots are also preferred.

How To Make Gajar Ka Halwa with Condensed Milk or MilkMaid
- To Make Gajar Ka Halwa, nicely wash the carrots and peel them first. Next grate the carrots using the grater. If you have a food processor you can use it. It makes the grating easier and faster.
- After grating, take the heavy bottom pan or wok, add the grated carrots and the milk, and get it to boil. Then on low flame cook stirring occasionally. Cook till the milk is nearly absorbed.
- Once the milk is nearly absorbed the carrot will be nearly cooked. Then add the condensed milk or milkmaid, and cook further on low flame stirring occasionally. Once the milk nearly evaporates, the halwa is nearly done.
- Now add the ghee and mix well. Cook for another 5 – 7 minutes then add cardamon powder, cashew nuts, and almonds and mix them well. Finally, the gajar ka halwa with condensed milk / milkmaid is done. It can be served garnished with chopped pistachios.
How to Make Gajar Ka Halwa in Cooker?
All steps are nearly the same to prepare in a cooker:
- Wash and peel the carrots and grate the carrots.
- Take the grated carrots and milk in the cooker. Cook on a medium flame for 2 – 3 whistles. Then let the steam pass naturally before you remove the lid.
- Then on low flame cook till the milk is nearly absorbed and then add the milkmaid / condensed milk. Further, cook till the milk is nearly getting evaporated. Then add the ghee and mix well. Further, cook for another 5 – 7 minutes. Finally add cardamom powder, cashew nuts, and almonds and mix them well. And then carrot halwa prepared in the cooker is ready to be served.

Gajar Ka Halwa With Condensed Milk or MilkMaid, Carrot Halwa Recipe
Ingredients
- 1 kg carrots
- 3 cups milk full cream milk
- 1 can tin milkmaid / sweetened condensed milk
- 2 tablespoons ghee / clarified butter
- 1/2 teaspoon cardamon powder
- 10 cashewnuts chopped
- 10 almonds badams chopped
Garnishing
- 10 pistachios chopped

Instructions
- Take the carrots and wash them. Peel them. Grate the carrots finely using the grater. If you have the food processor it will be better to use.
- Next take a heavy bottom pan or wok and put the grated carrots and milk and get it to a boil.
- On low flame, saute it stirring occasionally till the milk is nearly absorbed and carrots gets cooked.
- When milk is nearly absorbed, add the condensed milk / milkmaid, mix well. Again cook on low flame stirring occasionally.
- When this nearly dries up, the halwa is nearly done. Then add the ghee / clarified butter and mix well. Cook for another 5 - 6 minutes.
- Then add the cardamom powder, cashews and almonds and mix them well.
- Finally the Gajar Ka Halwa is done. Serve it garnished with chopped pistachios.
Notes
- Stirring occasionally is necessary to avoid the stickiness and getting burnt at bottom.
- Milk used should be thick (full cream milk) and not thin or skimmed milk.
