- To make creamy roasted tomato basil soup without cream, first, roast the tomatoes. For roasted tomatoes, preheat the oven to 430°F. Set a large baking sheet and place the halved tomatoes and garlic cloves. Now drizzle 2 tablespoons olive oil, salt, and pepper. Roast the tomatoes for about 25 minutes or till the tomatoes become soft. Then keep the roasted tomatoes aside. Can also be prepared in advance check the recipe for roasted tomatoes with garlic
- While the tomatoes are getting roasted, take the medium pan and add 1 tablespoon olive oil on medium-high heat. Add chopped onions. Saute them for 4 – 5 minutes. Add the thyme and saute until the onions become transparent (another 2 – 3 minutes). Add tomato paste, basil leaves, and sugar and stir fry for 1 – 2 minutes.
- Pour in the vegetable stock/broth. Season this mixture with salt and pepper. Stir well, cover, and get it to a boil. Reduce the heat to medium-low and simmer for 10 minutes stirring occasionally. Add the roasted tomatoes, and garlic and simmer for 2 minutes. Pour the soup into the blender and blend till it becomes smooth.
- Pour the soup back into the pan, and simmer the creamy roasted tomato basil soup for 3 -4 minutes before serving. It can be garnished with grated parmesan cheese and basil leaves and served hot.
- OPTIONAL: If the soup consistency is too thin. You can mix 3/4 tablespoon cornflour with half cup water and mix well without any lump to a thin paste. Get this homemade roasted tomato basil soup back to a boil and simmer for 2 – 3 minutes. Gradually add the cornflour thin paste to the soup and boil well till the soup becomes thick and creamy, stirring occasionally.

Easy Homemade Roasted Tomato Basil Soup Without Cream
Ingredients
- 3 lbs or 1.5 kg tomatoes halved lengthwise
- 7 garlic cloves peeled and smashed
- 2 + 1 tablespoons olive oil
- salt and fresh black pepper according to taste
- 2 medium yellow onions chopped
- 1 tablespoon fresh thyme minced
- 4 tablespoons tomato paste or tomato puree
- 2 cups basil leaves roughly chopped
- 1 teaspoon sugar
- 4 cups vegetable broth / stock
FOR THICKENING (OPTIONAL)
- 3/4 tablespoon cornflour
- 1/2 cup water

Instructions
- First preheat the oven to 430°F, on the baking sheet place the halved tomatoes and garlic cloves. Sprinkle 2 tablespoons olive oil, salt, and pepper. Roast them for nearly 25 minutes or till the tomatoes get soft and charred. Then keep the roasted tomatoes and garlic aside.
- Take a medium pan, on medium-high heat, add 1 tablespoon olive oil. Add the chopped onions and saute for 4 - 5 minutes. Add the thyme and mix well and further saute till the onions get transparent (2 - 3 minutes). Add the tomato paste/puree, basil leaves, and sugar and stir fry for another 1 - 2 minutes.
- Add the vegetable broth / stock and mix well. Season the mixture with salt and pepper. Stir well, close, and get it to a boil. Reduce the heat to medium-low and simmer for another 10 minutes stirring occasionally.
- Add the roasted tomatoes and garlic, and simmer for another minute. Next, blend the soup in the blender till it becomes smooth. Now transfer the soup to the pan and simmer the homemade creamy roasted tomato basil soup for 2 - 3 minutes before serving hot.
- OPTIONAL: If the soup consistency is too thin, mix the cornflour with water without lumps to a thin paste. Get the soup to a boil and gradually add cornflour paste to the soup, simmer till the soup becomes thick stirring occasionally.

- to make soup consistency thick, a boiled potato can be used.
