Gajar Ka Halwa recipe is mostly prepared during winter season and also the festive season in India like Diwali. This recipe of carrot halwa / gajar halwa is also very commonly served at different occasions and parties like Indian Carrot Dessert / Indian Dessert or Pudding.
When visiting my friends at Diwali and even at different wedding occasions and parties, this recipe of gajar halwa is served very often. That is also my favorite mouth watering Indian Carrot Dessert or Indian Sweet Dish.
Gajar Ka Halwa is served either hot / warm or cold. My favorite choice to have Gajrela is hot and mostly at winter.
Gajrela can be prepared in the traditional way like this recipe or also using carrot halwa in condensed milk which is little faster.

What is Carrot Halwa?
Carrot Halwa is also an Indian Carrot Dessert or Carrot Pudding. This halwa of gajar is basically prepared basically with carrots (gajar), khoya / Khoa (evaporated milk), milk, ghee, sugar, and nuts.
What is Khoya?
Khoya is called Mawa or Khoa in Hindi Language. This Khoya is reduced dry milk or dried evaporated milk solids. And Khoya / Khoa is mostly used to make sweet dishes. Khoya is easily available in India. But if there is problem in getting khoya to make Gajar ka Halwa , even condensed milk can be used as alternative. Check here to get khoya or Mawa outside India.
Which Carrot is Better To Make Gajar Ka Halwa?
If Delhi Gajar / Carrots are available in the market they are mostly preferred. These carrots are easily available during winter season. If these are not available then any regular carrots can be used.

How to Make Gajar Ka Halwa With Khoya?
- To Make Carrot Halwa, first wash the carrots nicely, then peel them and finely grate them with the grater. The Food Processor can also be used to grate easily.
- Take a heavy bottom pan or wok and heat it. Add ghee (clarified butter) heat it and then add cashews, almonds and pistachios. Slightly roasted them and keep aside.
- Next in the same ghee, add the grated carrots. Saute stirring continuously, till the carrots nearly changes the color, nearly 4-5 minutes. Now add the milk and stir well. Boil it, stirring occasionally till the milk is absorbed by the carrots. Stirring is necessary to avoid the halwa getting stuck at the bottom and specially when the milk is nearly evaporating.
- Add the sugar and mix it well. Cook till sugar gets dissolved. Further cook till it gets thicken to the halwa consistency and the ghee starts releasing.
- Finally add cardamon powder, Khoya / Mawa and stir well. Add slightly roasted cashew nuts, almonds (badams) and pistachios (pista) and mix well and put the flame off. Finally the Gajar Ka Halwa with Khoya is ready to be served.
Gajar Halwa Served at What Occasions
Gajar Halwa is mostly served at festival occasions like Diwali. It is also served on other occasions like Holi, Eid al-Fitr, and Raksha Bandhan. It is very commonly served as a dessert during the winter season in India. Mostly everyone prefers having it warm or hot. Carrot Halwa also tastes well with the combination of vanilla ice cream. Gajar ka Halwa Recipe with Khoya
Ingredients
- 1 kg Carrots
- 4 tablespoons ghee / clarified butter
- 3 cups milk full cream milk
- 3/4 cup sugar
- 250 grams cup khoya / mawa
- 1/2 teaspoon cardamon powder
- 10 cashewnuts chopped
- 10 almonds badman chopped
- 10 pistas chopped

Instructions
- First wash the carrots nicely in running water and then peel them. Next grate the carrot finely with the grater. The Food Processor can also be used to grate easily.
- Heat ghee (clarified) in a heavy bottom pan or wok Add the chopped cashews, almonds and pistas. Slightly roast them and keep aside
- In the same ghee, add the grated carrots. Saute them stirring continuously for nearly 4-5 minutes or till the carrots nearly changes color.
- Add milk and stir well. Now get it to a boil, and stir occasionally, till the milk is absorbed by the carrots. Here stirring is necessary to avoid the halwa getting stuck at the bottom and specially when the milk is nearly evaporating.
- Now add sugar and stir it well. Now cook till sugar gets dissolved. Then further cook this till halwa consistency thickens and the ghee starts releasing.
- Finally add cardamon powder, Khoya / Mawa and stir well. Let the Khoya / Mawa get well mixed with the halwa.
- And then add slightly roasted cashew nuts, almonds (badams) and pistachios (pista) and mix well and put the flame off. Finally the Gajar Halwa with khoya is ready to be served. It can be served either warm / hot/ chilled.
Notes
- Milk used should be thick (full cream milk) and not thin or skimmed milk.
- Use a heavy bottom pan for cooking, to avoid halwa stickiness
