Different types of clams available
In Goa the type of clams available are Tisre, Khube, shinnaneo. These are all available in the deep sand. Kalva is another type of clam mostly found near the sea shore close to the rock. Should Clams Be Soaked Before Cooking
The Clams brought can contain sand, salt and other things in it. So how to clean Clams / Tisre when cooking clams dry. These Tisre / Khube needs to be soaked in water with a pinch of salt for nearly 20 -25 minutes. While soaking, the clams keeps on filtering the water as the breathe. How to Make Clams Dry / Tisrya Sukke
- After Soaking the the Clams / Tisre Sukhem, take the sharp knife open the halves of the clam, then take the flesh from one shell and place it on another shell and discard the previous shell. Continue with this for all remaining Tisrya / Khube / Clams and store the water collected after opening the clams as stock .
- Take a wok and heat the oil. And fry the ginger garlic paste and red chillies for few seconds. Then add onions and fry till they get transparent. Then add the red chilli and turmeric powders and fry for a few seconds more.
- Add the clams / Tisreo, green chillies, garam masala, sugar, tamarind water, 1 tbsp coriander leaves, salt and stock water which was kept aside.
- Mix all the ingredients very well and the cover the pan and let it cook on low flame till the water nearly dries up, then finally add the grated coconut and cook till the clams / Khube are cooked. Finally Garnish the goan tisre sukke / Sukhem or clams dry with coriander leaves.

Goan Clams Dry Recipe, Tisrya / Tisre Sukka Recipe
Ingredients
- 40 - 50 clams / tisre / Khube
- 1 tbsp ginger garlic paste
- 2 Kashmiri Red Chillies
- 2 medium chopped onions
- 1/2 tsp turmeric powder
- 1 tsp chilli powder
- 2 green chillies slit
- 1/2 tsp garam masala
- a pinch of sugar
- 1 tbsp Tamarind soaked in 1/4 cup warm water
- 1/2 cup grated coconut
- 2 tbsp chopped coriander leaves
- 4 tbsp Oil
- salt as per taste

Instructions
- First soak the Tisre / Clams in water with little pinch of salt for 20 - 25 minutes. Then with some sharp knife open the clams / Tisreo halves and remove flesh from one shell and place it on another shell. Now discard the first shell. Follow this for all the Tisrya / Shube and store the water collected after opening the clams as stock.
- Heat oil in the thick frying pan / wok and fry the red chillies and ginger garlic paste for a few seconds.
- Add Onions and fry till they become transparent. Now add the turmeric powder and red chilli powder and fry for a few second more.
- Now add the clams / Tisre, green chillies, garam masala, sugar, tamarind water, 1 tbsp coriander leaves, salt and little stock water which was kept aside.
- Mix all the ingredients very well and and let it cook on low flame. Cook till the water nearly dries up. Then finally add the grated coconut and cook till the clams / Khube are cooked. Finally Garnish the goan tisre sukke / Sukhem with remaining coriander leaves.
