How To Make Smothered Pork Chops With Gravy
- To make smothered pork chops with mushroom gravy, first take paper towels and pat dry the pork chops. Take a mixing bowl and season the pork chops with salt, pepper, garlic powder, and cayenne. Coat the chops with flour, shake them, and keep the excess flour aside.
- Take a large frying pan / skillet, heat oil on medium heat. Fry pork chops till golden brown, nearly 3 – 4 minutes on each side. Transfer the pork chops to the plate and keep them covered.
- In this same frying pan add unsalted butter, then add the sliced onions and mushrooms, a pinch of salt. Saute the mushrooms and onions for 7 -8 minutes, stirring occasionally, till tender and browned. Add minced garlic, stir well, and cook for nearly 30 seconds. Then add the remaining flour, stir it well with onions and mushrooms to get coated evenly, and cook for nearly 2 minutes, stirring constantly.
- Slow whisk in the chicken broth and the heavy cream / butter. Stir them well. When it comes to a boil, reduce the heat. Scrape any browned bits from the bottom of the pan and, stir well. Let the onion gravy simmer, stirring occasionally for nearly 2 – 3 minutes or till the gravy starts thickening. Add the pork chops, mix well, with the gravy and let the chops get simmered nearly for 5 – 7 minutes or the internal temperature reads 145˚. Adjust the seasoning if necessary. Garnish the one-pan smothered pork chops with mushroom and onion gravy with parsley leaves.

Ingredients
- 2 pounds 1 kg pork chops (bone-in) (nearly 1 inch thick)
- salt and fresh ground pepper
- 3/4 tablespoon garlic powder
- 1/2 teaspoon cayenne
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 large onion sliced thinly
- 8 ounces sliced mushrooms sliced
- 4 cloves garlic fine chopped
- 1 + 3/4 cup chicken or beef broth
- 1/4 cup butter milk or heavy cream
- Fresh Parsley chopped optional

Instructions

- Let the onion gravy simmer, stirring occasionally for nearly 2 - 3 minutes, till the gravy starts thickening
- Now add the pork chops and mix well with the gravy. Let the chops get simmered for 5 - 7 minutes or the internal temperature reads 140˚
- Taste and adjust the seasoning if necessary. And finally, garnish the smothered pork chops with onion gravy with parsley leaves before serving.
Notes
- In the smothered pork chops with onion gravy recipe, I have used bone-in chops, you can also use the boneless chops. The boneless chops also goes well with this recipe. Also, use thick-cut pork chops in the recipe, the other thin chops will dry out soon.
- If you don't like mushrooms, they can be omitted.
